Coconut Ice

I remembered another way to get some coconut. In coconut ice!

Not the stuff you buy over the counter, which is only a pale imitation of the real thing even if it is coloured a nasty shade of pink, but real honest to goodness old fashioned coconut ice, rich and sweet enough to make any self-respecting cardiologist faint clean away.

Ingredients

340g desiccated coconut
340g icing sugar
400g tin of condensed milk
Optional food colouring

Method

1. Put the condensed milk into a bowl and add the icing sugar. Beat them together with a solid spoon, then mix in the desiccated coconut. The mixture will get firm and difficult to stir, but keep going till everything is all mixed up well.

2. Divide the mixture into two. You can add strawberry essence or similar to one of them if you like the look of the pink and white.

3. Spread into a square tin. If you have a coloured layer, place it over the top of the other. Leave it on the lower shelf of the frig overnight.

4. Cut into small blocks. Eat!
