Canned Fish Patties

A recipe today. Tuna patties or, as I had in my childhood, salmon patties. All from the can of course. We ate ours on Fridays, I preferred them to smoked cod and this is the absolute genuine recipe of my Mum’s from the 1940s almost blow for blow. Almost, but not quite. Mum didn’t have access to instant mashed potato in packets.

Canned salmon was cheap this morning so that’s what I’m making, but tuna patties are excellent too. I’m not going to muck around with getting measurements translated, and I’m going to leave it to your doubtless common sense to figure how much of which ingredients go where. I’m in a hurry. My fish patties are in the oven.

What you need

  • Can of salmon or Tuna
  • Packet of instant mashed potato
  • A couple of onions chopped fine

What you do

  • Tip the fish out into a bowl and pour off the oil
  • In another bowl make up your instant mashed potato mix
  • Start adding potato to the fish until you have a sold mixture
  • Add the onions
  • Shape out into patties
  • Fry lightly in pan or bake in oven for 15 minutes till deep brown

My mother used to serve these with parsley sauce. I’ll give you that recipe another day but you can instead mix up chopped fresh parsley into the potato and fish mix. If I had a bit of chili pepper I would chop it up and add to the mixture as well.

Can you spare a dime for an old dame?

I made something simular for lunch today except I used canned tuna instead of salmon. I mixed fresh mint from my herb garden, dill, and garlic into the tuna as an experiment (because I can only make so much mint iced tea!) It tasted great and I’m going to make it again soon.
